Vinification

Cabernet Sauvignon is a late-ripening varietal, typically harvested at the end of September. This wine is crafted from grapes that have reached optimal polyphenolic ripeness. After destemming, alcoholic fermentation with skin contact takes place over several days. Malolactic fermentation follows, using selected bacteria. The wine then matures in a combination of French and American oak barrels.
