Vinification
This is an early to mid-ripening varietal, typically reaching maturity around the first week of September.
The wine is made from grapes that have achieved optimal aromatic and polyphenolic ripeness. After destemming, alcoholic fermentation takes place with skin contact for a few days. Malolactic fermentation follows, using selected bacteria, and the wine then undergoes extended aging in French barriques.
